Meal Plan 04/03/23 - 04/07/23

We had a lot of fun this weekend and with that fun came a lot of takeout and snack meals. I’m committed to the meal plan this week is what I’m saying. Vegetables are our best friends this week. Takeout, we don’t know her (this week).

Monday: The butcher had a new flavour of chicken wings this week so we’re trying Maui Chicken Wings, oven-baked because our air fryer was part of the giant recall and we haven’t received our replacement yet. We’ll eat Mac & Cheese and fresh veggies with roasted red pepper hummus on the side.

Tuesday: Bacon-lettuce-tomato-avocado sandwiches on Grossy Pelosi’s Mom’s Italian Bread.

Wednesday: Spinach and Asparagus Quiche served with arugula salad.

Thursday: Creamy Roasted Carrot Soup served with grilled cheese sandwiches and fresh veggies with dip.

Friday: Coconut Cod served with wild rice and some form of green Responsibility Vegetable on the side.

I’m hoping to have a big baking week because my family is getting together for the first time since … last summer maybe? I missed Thanksgiving because we had hand-foot-mouth in our house and one of my siblings missed Christmas because their family was sick. Last summer may have been the last time we were all together. Anyway, my parents are hosting an egg hunt in their backyard for all of the little kids and I’m hoping to sit around the fire pit with my siblings and eat baked goods. So far on my wishlist I’ve got: Nanaimo Bar Cake, Grandma’s Pumpkin Chiffon Pie, Mini Lemon Meringue Tarts, and Grossy’s Chocolate Chip Cookies made with mini eggs. It’s an ambitious list but I’m motivated by the idea of taking to-go containers for my siblings to fill up with sweet treats to take home and enjoy in quiet moments between Easter chaos.
